For many years Dalton has aspired to make an ultra-premium wine. It has taken many years of planning in the vineyards to create a site that produces grapes worthy of this accolade
In 2006 the final sites were chosen and the vineyards pruned to minimize their yields. The fruit was further thinned throughout the growing season so that only the best bunches remained on the vines.
After harvest the wines were allowed to mature for two years in the finest french barrels where they were regularly tasted and the weaker wines rejected, leaving only 6500 bottles.
Once bottled the wine was allowed to settle and improve for a further year in the bottle before it's release onto the market.
We are now proud to introduce our new Matatia wine named after Mat Haruni founder and mainstay of Dalton Winery. The wine is a blend of Cabernet Sauvignon, Merlot and Cabernet Franc. Each bottle is individually numbered and comes in a bespoke presentation box.
The Matatia wines will only be made in exceptional years and in very small batches so supply will always be limited. The wine will age gracefully over time.
Blend of 80% Cabernet, 15% Merlot, and 5% Cabernet Franc
