The Alma series was conceived as a series of premium, blended wines. 2009 -10 witnessed the introduction of new wines to the Alma series, the Chardonnay – Viognier blend brings a new dimension and flavour profile to Israel wines and is once again being pioneered by Dalton.
WINEMAKING:
The grapes were selectively picked in late September and early October. The grapes for this wine came from separate vineyard that were picked and fermented separately.
The viognier was fermented in small barriques using a natural spontaneous fermentation method; the chardonnay was cold fermented in stainless steel. At the end of fermentation both wines were blended and 60% allowed to age in barrels for about 4 months. The final blend is 60% Viognier 40% Chardonnay.
TASTING NOTES:
Alma Chardonnay - Viognier is a medium bodied wine showing fragrances of peach, summer flowers and honey. The finish is long and soft with a gentle level of acidity.
